Who doesn't love a chocolate cake, let alone one that uses vegan ingredients and mostly package-free ingredients from The Tare Shop! One of our team members made this cake for a potluck, and not a crumb was left.
This will be your go-to cake for birthdays and special events :)
For cake:
- 1 cup oat milk
- 1 tbsp apple cider vinegar
- 2 cups AP flour
- 1 ¾ coconut sugar
- ¾ cup cacao powder
- 2 tsp baking powder
- 1 ½ tsp baking soda
- 1 teaspoon pink salt
- ½ cup sunflower oil
- ⅔ cup apple sauce
- 1 tbsp vanilla extract
Instructions
- Mix the oat milk with the ACV and set aside
- Mix all the dry ingredients
- Mix the wet ingredients, and add to the dry
- Whisk well until combined
- Divide batter into 2 pans evenly, and bake at 350 degrees for 30-35 minutes
- Let cool completely and then add the icing
Icing:
- 1 cup cashews, soaked in boiling water for 1 hour (T)
- 1-2 tsp lemon juice
- ¼ cup oat milk
- 3 TBSP maple syrup (T)
- 1 tsp vanilla extract (T)
- 1-2 tbsp icing sugar (T)
- 2-3 tbsp vegan butter
Instructions
- Drain the cashews
- Add all ingredients to a blender and blend for a few minutes, scrapping down the sides until smooth
- Refrigerate the frosting for about 30 minutes, and whisk before putting on cake
