The perfect vegan chocolate cake

Who doesn't love a chocolate cake, let alone one that uses vegan ingredients and mostly package-free ingredients from The Tare Shop! One of our team members made this cake for a potluck, and not a crumb was left.

This will be your go-to cake for birthdays and special events :)

For cake:
  • 1 cup oat milk
  • 1 tbsp apple cider vinegar
  • 2 cups AP flour 
  • 1 ¾ coconut sugar
  • ¾ cup cacao powder
  • 2 tsp baking powder 
  • 1 ½ tsp baking soda
  • 1 teaspoon pink salt
  • ½ cup sunflower oil 
  • ⅔ cup apple sauce
  • 1 tbsp vanilla extract
Instructions
  1. Mix the oat milk with the ACV and set aside
  2. Mix all the dry ingredients
  3. Mix the wet ingredients, and add to the dry
  4. Whisk well until combined
  5. Divide batter into 2 pans evenly, and bake at 350 degrees for 30-35 minutes
  6. Let cool completely and then add the icing
Icing:
  • 1 cup cashews, soaked in boiling water for 1 hour (T)
  • 1-2 tsp lemon juice
  • ¼ cup oat milk
  • 3 TBSP maple syrup (T)
  • 1 tsp vanilla extract (T)
  • 1-2 tbsp icing sugar (T)
  • 2-3 tbsp vegan butter
Instructions
  1. Drain the cashews
  2. Add all ingredients to a blender and blend for a few minutes, scrapping down the sides until smooth
  3. Refrigerate the frosting for about 30 minutes, and whisk before putting on cake
