Bringing your lunch to work with you can seem like a hassle if you're unprepared, and it can be tempting to just grab something on the go.
However, a little organization goes a long way - and preparing your own lunches for your work or school day is not only less wasteful, it's also easier on your bank account!
Here's some tasty recipe inspiration for healthy, sustainable weekday lunches!
Chickpeas are one of the most versatile legumes out there. Use them to make hummus, stews, or roast them with salt for a tasty snack.
One of our go-to lunches is a chickpea salad. Pick out your favourite vegetables, then shop our 'bulk' section for chickpeas, olive oil, chilli powder, garlic and salt and pepper. So easy and so delicious!
You can also make a chickpea sandwich mashing the cooked chickpeas with some mayo, onions, and seasoning!
Wondering how to cook dried chickpeas? Get a copy of “Our Guide to Cooking Legumes” + there are a bunch of delicious recipes in it :)
Wanting to skip that step but also enjoy chickpeas? Try our falafel mix!
Spiced lentil bowl
Our spicy lentil mix is great on top of rice, salad, or even on it's own! Bring the lentils to a boil with 3 cups of water (and ½ to 1 tsp of salt if desired). Simmer for around 15 minutes, until the lentils have broken down.
When the lentils are almost done, gently fry the spice mix in oil, being careful not to burn them.
Add the spices to the lentils, along with a squeeze of lime juice and fresh chopped cilantro if desired. Put on top of rice, salad, or veggies!
Lentil and Split Pea Soup
Is there anything more comforting than a warm bowl of soup? Order in lentils, split peas and herbs and spices from our website and spend your Sunday making a big pot of goodness!
You can then easily transfer the soup to a jar or tupperware to enjoy it at work. Soups also freeze really well so you can make a big batch and freeze some to pull out in a few weeks (future you will thank you).
Healthy, filling, and super easy to throw together, quinoa salads are one of our go-to lunches for busy days at your desk.
Once you have quinoa as a base, you can throw pretty much any vegetables you like into the mix and top with your favourite cheese, seeds or nuts.
Order quinoa from our site and customize each salad however you like!
